This is my new favorite recipe! Its healthy, easy to make, and so delicious!
Place in a medium soup pot:
1 large onion, cut in chunks
6-8 medium sweet potatoes
5 whole cloves garlic, peeled
1/2 strip wakame, crumbled (this is a sea vegetable. I forgot last time and still good so don’t worry if can’t find)
Add water just to top of vegetables. Bring to boil and simmer till tender. Add:
1 can coconut milk, full fat (I’ve also used light, and still good)
2-3 Tbsp. butter or coconut butter
1 tsp curry powder (I use a Tbsp)
herbamere and pepper to taste
Puree till smooth. Add additional seasonings to taste. Can add ginger if you like too.
